I received a bundle of fresh oregano in my Farmship Grower's Cooperative Harvest Box this week and wanted to do something extra tasty with it. I asked for some suggestions during my Facebook Live video and received so many great ideas! I landed on a type of pesto but created more of a spread that is full of flavour and really versatile. Without further ado here's the recipe:
Creamy Cashew & Oregano Spread
Makes about 1-1/4 Cup
1/2 C fresh oregano leaves and soft stems, roughly chopped
1/2 C cashews*
2 cloves garlic, roughly chopped
1 Tbsp lemon juice
1/4 C olive oil
1/4 C water
2 Tbsp nutritional yeast**
1/4 tsp each of salt & pepper
*The recipe technically works without soaking the cashews but if you have the time, soak the cashews in water for at least 20-30 minutes before hand. Drain before adding to the food processor and the spread will be much creamier.
**Nutritional yeast is what I had in my cupboard but if you have some parmesan cheese available it would also work really well in this spread.
I'm so happy with the flavour of this spread that I'm kinda hoping I get another bundle of oregano in next week's harvest box! Guess we'll just have to see during the next Facebook Live video on Thursday at 6pm (Pacific).
